STIR FRIED SWEET LEAF / TAUSI MURANGAI KEERAI PERATAL

Hi! Everyone, hope all of you are doing great and a warm welcome to all new readers to my blog Ruku's Authentic Kitchen Flavors where real food recipes are shared. Since I have been sharing some of the non-vegetarian recipes, today I am going to share with you a vegetarian recipe which is stir fried sweet leaf / tausi murangai keerai peratal my family style. It is one of the favorite vegetable loved by my family. For a big family, we buy at least a  kilo and my sisters would help my mom to clean them patiently. It does look a lot before cooking but once it hits the wok it shrinks. Hope you try this at home. Enjoy!



INGREDIENTS
2 bunch sweet leaf / tausi murangai keerai 
2 big onions (sliced)
5 cloves garlic (chopped)
1 fresh green chili (roughly chopped )
1 fresh red chili (roughly chopped)
1 sprig curry leaves
1 tablespoon split ulunthu /urad dhal (without skin)
1/2 cup of grated coconut
1/4 teaspoon turmeric
Salt to taste
Oil

PREPARATION METHOD
  1. Wash the sweet leaf few times and keep aside.
  2. In a wok, add oil. Once the oil heats up, add in the urad dhal. The urad dhal gives flavor to the oil and a nutty taste to the sweet leaf. Do not let it burn.
  3. Now add in the onions, garlic, chopped chilies, curry leaves and mix well till all the raw smell is gone.
  4. Then add in the sweet leaf and combined all together till the leaves are wilted.
  5. Add in the turmeric and salt and combined them well. Need not add water as the leaves itself have liquid in them.
  6. Put on the lid and let the sweet leaf cook till all the water evaporates.
  7. Then add in the grated coconut and combine well. Cook for about 2 minutes.
  8. Switch off stove and serve.
  9. Best eaten with rice.
