INGREDIENTS
2 bunch sweet leaf / tausi murangai keerai
2 big onions (sliced)
5 cloves garlic (chopped)
1 fresh green chili (roughly chopped )
1 fresh red chili (roughly chopped)
1 sprig curry leaves
1 tablespoon split ulunthu /urad dhal (without skin)
1/2 cup of grated coconut
1/4 teaspoon turmeric
Salt to taste
Oil
PREPARATION METHOD
- Wash the sweet leaf few times and keep aside.
- In a wok, add oil. Once the oil heats up, add in the urad dhal. The urad dhal gives flavor to the oil and a nutty taste to the sweet leaf. Do not let it burn.
- Now add in the onions, garlic, chopped chilies, curry leaves and mix well till all the raw smell is gone.
- Then add in the sweet leaf and combined all together till the leaves are wilted.
- Add in the turmeric and salt and combined them well. Need not add water as the leaves itself have liquid in them.
- Put on the lid and let the sweet leaf cook till all the water evaporates.
- Then add in the grated coconut and combine well. Cook for about 2 minutes.
- Switch off stove and serve.
- Best eaten with rice.
