Today I am going to give a simple recipe for even youngster can do it. This is also to get the youngsters to learn easy recipes till they get expert in cooking. I encourage youngsters out there to try. It's Egg Kurma a very simple dish and tasty too. So let us see the ingredients needed.
INGREDIENTS
5 boiled eggs
5 boiled eggs
1 big onions (sliced)
1 carrots (sliced side ways)
1 carrots (sliced side ways)
1 red fresh chili (slit not to cut through)
2 potatoes (cut into quarters)
1 tomato (cut into cubes)
1 sprigs of curry leaves
1 stick of cinnamon
3 cardamom pods
3 cloves
3 star anise
3 tablespoon of ghee / oil
11/2 cup of diluted coconut
1 1/2 cups of thick coconut
Salt to taste
BLENDING FOR THE KURMA CURRY PASTE
2 tablespoon of fennel seeds
2 tablespoon of cumin seeds
2 1/2 tablespoon of coriander seeds
1 thumb size ginger
3 cloves of garlic
(you can also buy the packet kurma powder. It's up to you. I prefer to do my own paste as it is healthy)
METHOD
1. Do the blending items into a smooth paste. As you can see above. Keep aside.
2. Heat ghee/oil in a wok. add in the cinnamon sticks, cardamom pods, cloves, star anise and the curry leaves. Cook till the cinnamon stick open up. Then add in onions, red chili and tomatoes.

6. Get the diluted coconut and pour in the wok. Combine everything well and let the potatoes and carrot cook through. If the liquid is getting lesser not to worry you have the thick coconut. It's up to you if you want you kurma thick or thin. It's is all your preference and how you want it to be. There is nothing wrong here.
7. Now add in the boiled eggs and salt to taste.
8. Then add in the thick coconut. Put the fire slow. You don't want the coconut to curd. We need a smooth curry.
9. Now the egg kurma is ready to be served. Enjoy with your family.
